Mince, Beans and Veggies

Discover the deliciousness of 'Mince Beans and Veggies,' a satisfying and wholesome dish that's a delightful twist on classic comfort food.


Ingredients:

1 kg free-range beef mince

4 large carrots or courgettes

4 celery sticks (optional)

10 beefsteak tomatoes (or 12-13 Roma tomatoes)

2 onions diced

3 cloves garlic - optional

1 tbsp olive oil

2 tbsp tomato paste

1/2 tbsp dried oregano

Fresh basil

Optional:

1 tin organic kidney beans

1 tsp chilli flakes

Salt & pepper to taste


Method:

1. Heat the olive oil in a pot on medium heat and sauté the onions for 5 minutes or until translucent. Add the garlic and cook for an additional minute.

2. Slice the tomatoes and add them to the onions and garlic

3. Dice the carrots and celery and add them as well.

4. Add the oregano and tomato paste, stir and simmer uncovered for around 20 minutes.

5. Add the mince meat; use a wooden spoon to break the mince into small pieces as it cooks.

6. Add the kidney beans and chilli flakes

7. Let it simmer, covered, for 5 minutes.

8. Taste and season with salt and pepper
