Anti Inflammatory Versatile Chicken Stew

Embrace the healing warmth of our 'Versatile Anti-Inflammatory Chicken Stew' crafted with chicken, celery, onions, and carrots for a nourishing, immune-boosting meal.


Ingredients:

4 large onions, diced.

4 large carrots, diced.

1 bunch of celery, diced.

1 tbsp ghee or coconut oil

1 kg skinless chicken pieces (thighs and or breasts)

4 tbsp gluten-free vegetable stock powder

2 tbsp arrowroot or corn flour

Salt and pepper


Method:

1. Add coconut oil or ghee to a pot and fry onions for 5 minutes.

2. Add the carrots and celery and continue to cook over low to medium heat.

3. Mix stock powder with 500 ml of boiling water and add that to another pot.

4. Add the chicken pieces and ensure they are covered with water,if not, add some more.

5. Bring to a boil, cover with a lid, allowing enough space for steam to escape and cook for about 20 minutes.

6. It is ready if the chicken breaks apart as you stir it. Transfer the chicken to the onions, carrots and celery pot.

7. Keep boiling the chicken's water to reduce it to a thicker consistency.

8. Mix cornstarch in some water and add to the reduction. Once it has reached a thick sauce consistency, add to the chicken and vegetables and stir.
